Sheet Pan Lemon Garlic Shrimp with Roasted Asparagus and Baby Potatoes.

Lemon Garlic Shrimp

  • Shrimp                                                                 1 cup

  • Avocado Oil                                                        1 tbsp

  • Lemon (Sliced)                                                   3 slices

  • Garlic Cloves (Crushed and Minced)              4 cloves

  • Salt                                                                       1 tsp

  • Pepper                                                                 1 tsp

     

    Roasted Asparagus and Baby Potatoes

  • Asparagus                                                          10 spears

  • Baby Potatoes (Nibbles from Publix)            15 each

  • Avocado Oil                                                       1 tbsp

  • Salt                                                                      2 tsp

  • Pepper                                                                2 tsp

  • Granulated Garlic                                             1 tbsp

Garnish

  • Chopped Parsley 1 tbsp

  1. Pre-heat Oven to 350 degrees.

  2. Toss shrimp in a bowl with avocado oil, lemons, minced garlic, salt and pepper. Spread on a sheet pan.

  3. Toss asparagus and baby potatoes in separate bowls with avocado oil and seasonings, spread on a sheet pan.

  4. Bake shrimp for 15 minutes, asparagus for 20 minutes, and potatoes for 35 minutes. 

  5. Serve, Garnish, and Enjoy!
